This week instead of a rest/yoga day I had a 3 mile training run. Most of my training runs consist of 4-6 miles so 3 miles felt like a breeze. Although today was the first full day of spring someone forget to tell Mother Nature so due the snow and rain we had today I went to Planet Fitness to visit my old friend the treadmill for today’s run.
I finished the 3 miles in 27:36 an average pace of 9:12/mile.
For dinner tonight I made one of my favorite Rachael Ray recipes Chicken Riggies. I am not usually a big fan of Rachael Ray but every once in a while she has a recipe I really like and this one is my favorite. The recipe is actually Chicken Riggies and ‘Scarole with Soul but I only make the Chicken Riggies part, although I’m sure the escarole is delicious too. This meal is quick, easy, healthy and delicious both right away and left over. Chris is not a big fan of leftovers but this is one meal he will eat the next day.
