The outlook for dreary weather today sent me straight for the treadmill at 6:00 am for my 7 mile tempo run. I find the treadmill boring but I do like it for speed work because I can keep my pace steady which I find more difficult when running outside.
My biggest pet peeve this morning at the gym was that they had their music playing so loud that I couldn’t here my own music on my headphones. By the time I realized how loud their music actually was I had already started running on the treadmill and I didn’t want interrupt my run to ask them to turn the music down, so I turned my music up. I don’t like to keep my music too loud when I wear headphones because I’m afraid I’m going to end up with Tinnitus (a constant ringing in the ears), hopefully one day won’t do my ears any harm.
The treadmill at the gym insists on cooling down after 60 minutes so I am forced to restart it to continue any run that goes over the 60 minute mark. Even though there is no time limit on the treadmills at Planet Fitness, I guess this is their way of saying get off.
- Mile 1: Warm up-6.2 mph (9:41 min/mile)
- Mile 2: Tempo-6.7 mph (8:57 min/mile)
- Mile 3: Tempo-6.7 mph
- Mile 4: Tempo-6.7 mph
- Mile 5: Tempo-6.7 mph
- Mile 6: Tempo-6.7 mph
- Mile 7: Cool Down-6.2 mph (9.41 min/mile) with some sprinting for the 0.40 miles 6.5-8.0 mph (9:14-7:30 min/mile)
- Total- 7 miles in 63:40, average pace 9:05 min/mile)
I refueled with a protein shot immediately after the run and when I got home I had over easy eggs with toast and coffee. I am a complete egg addict, my goal is to try to incorporate more yogurt, oatmeal and fruit into my breakfasts, but usually when push comes to shove I eat eggs.
After my run today I got busy in the kitchen. I put together all the ingredients for my Turkey Chili and got it into the crock pot, this was Chris’s request for his birthday dinner. I moved on to cooking up some of Hungry Girl’s delicious and healthy Yum Yum Brownie Muffins, you won’t believe just how easy these are to make!!! I added my own little touch to the recipe by mixing in some peanut butter chips and butterscotch chips into the batter, the addition makes these muffins taste like an indulgence. These will make a delicious “cake” for Chris’s Birthday, all they need is a few candles.
Now as promised in the title of today’s blog here is my healthy snack:
2 cans of Chickpeas (Garbanzo beans) drained and rinsed well
Misto olive oil spray or any spray
chili powder to taste
garlic powder to taste
cayenne pepper to taste
Preheat oven to 400 degrees. Spray baking dish or sheet with Misto Olive oil spray, add drained chickpeas. Spray chickpeas with Misto then sprinkle with chili powder, garlic powder, and cayenne pepper and mix well. Roast chickpeas for 40 minutes, stirring occasionally, then cool. Store in airtight container for about one week. One serving = 1/2 cup.
I always have canned chickpeas (Garbanzo beans) on hand in the pantry, you can use any king you like just drain and rinse well.
I like to use a baking dish rather than a sheet pan because every time I have used a sheet pan I have lost some of the chick peas in the oven while I was stirring them.
I love my Misto sprayer, you can add any kind of oil, I usually add extra virgin olive oil, then pump it up and spray. It is great for decreasing the amount of fat you add into a dish and it’s reusable too.
These are my spices of choice but you can mix and match basically using any spice combination you like.

When done they are crunchy and delicious!! These are a great snack to carry in your purse, I usually put 1/2 cup servings into Ziploc bags and then they are ready to grab when I am on the run!! Try them, trust me you won’t be disappointed.
