After the weekend my husband and I usually crave a light, healthy dinner to balance out all the junk we ate over the weekend. When I want light and healthy I usually go for some type of fish and vegetable, sometimes I’ll add in a starch like potatoes or rice but it just depends on how I feel that day. Today I decided to have Tilapia with broccoli, not only is the meal light and healthy but it is quick and easy to prepare. After all the carb loading before my race I nixed the starch today.
- Tilapia (4-6 oz per person)
- Juice of 1/2 lemon
- 1/4 cup white wine
- 1/2 cup whole wheat bread crumbs
- 1 handful parsley, chopped
- 2 tsp. extra virgin olive oil
- 1-2 tbsp. Garlic Gold Nuggets
- 1 bag of broccoli florets or about 3 cups
- 4-5 cloves garlic minced
- 1 tbsp. extra virgin olive oil
Preheat oven to 400 degrees. Pour white wine and lemon juice into a baking pan and place Tilapia in pan. Mix together the whole wheat bread crumbs, parley and 2 tsp. extra virgin olive oil. Top Tilapia with bread crumb mixture. Bake 22 minutes.
Meanwhile, place broccoli in microwave safe dish with 1 tbsp. water and cover. Microwave 4 minutes then drain water from dish. While broccoli is cooking heat 1 Tbsp oil in a small non-stick frying pan, add garlic and saute until golden brown then pour over broccoli.
Serve with rice or potatoes if desired.
