Clean eating can be pretty easy if you plan ahead. I have been pretty much following the Supreme 90 Day diet plan included with the system (don’t forget to check out my giveaway here) with a few of my own recipe additions. Basically I eat 5-6 times/day, 3 meals and 3 snacks each containing lean protein, a complex carb, fruit and/or veggies and a healthy fat. Eating 5-6 times/day cab be time consuming if not planned out in advance so I plan all my meals on Sunday and then go shopping for all the ingredients I need for all my recipes. Last night’s meal was my take on a healthy jambalaya, it was an easy, healthy meal that I will definitely have again!!


HEALTHY JAMBALAYA
  • 1 lb. chicken breast, cut into 1-in. cubes
  • 1/2 lb uncooked shrimp, cleaned and tails removed
  • 1 bunch of scallions, chopped (about 4-5 scallions); reserve 2 tbsp. for garnish
  • 1 green bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 (14.5oz.) can diced tomatoes (any type you like, I used fire roasted with garlic)
  • 2 cups low sodium chicken broth
  • 1 cup brown rice
  • 1 tsp. cajun seasoning (or more if you like it spicy)
  • 1 tbsp. olive oil
  • tabasco to taste

Heat olive oil in large skillet over med-high heat. Add in chicken and brown, about 3 minutes on each side. Then add in scallions, peppers, and garlic and cook for a bout 5 more minutes until veggies have softened. Then add in tomatoes, chicken broth, rice and cajun seasoning. Bring to a boil then lower heat and cover, cook 40-45 minutes until rice is done, stirring occasionally. Stir in shrimp at very end and cook about 2 minutes until pink (shrimp doesn’t take very long to cook) and then remove from heat. Sprinkle with extra scallions and serve. You can add tabasco to taste, I usually just add it to my portion and let everyone else add it to their portion if they like it.

  1. Just a quick question: Are your giveaways open to international readers too, or only residents of the US and Canada? I've won a few, just to be told afterwards that the postage is too expensive and that I have to give up my prizes… :(

Hi Runnergirl: I see that many giveaways are US/Canada only due to the expense of shipping, I have not thought too much about this until now unfortunately the Supreme 90 Day is US/Canada only but if you want to enter the Bondi Band giveaway I would be happy to ship that one internationally. Sorry about the confusion I will be more specififc during my next giveaways!!
