This recipe was passed on to me by my mother-in-law, Pauline. It is so easy to put together and tastes delicious. You can use pork, turkey or chicken sausage they all work great, my personal favorite is pork but to keep it healthy I mostly use lean chicken sausage when I make this recipe. Every once in awhile I give in to the pork just because it is sooooo good!!
Sausage with Potatoes, Onions, Peas and Mushrooms
- 1 thin sausage ring, cut into 3 in. pieces (pork, chicken or turkey)
- 1 lb red potatoes (or any kind you prefer), quartered then sliced thin
- 2 medium onions, halved then sliced thin
- 2 cans of no salt added peas
- 2 cans sliced mushrooms
- olive oil (about 2 Tbsp.)
- salt and pepper to taste
Preheat oven to 425 degrees. Spray large baking dish with olive oil spray. Place sausage at the bottom of the pan and then layer in onions, peas, mushrooms and potatoes. Add olive oil, salt and pepper and stir. Place in oven, stirring occasionally. Cook 40-45 minutes.
I serve this in a bowl all mixed together and it is absolutely delicious. Chris is not a big fan of leftovers but this is one of the few dishes he will actually reheat and eat, just pop it in the microwave or toaster oven.
Tip: After you have sliced the potatoes soak them in water, this not only prevents them from browning but it also helps to draw out some of the starch so they become crispier when cooked. Just make sure you dry them well before adding them to the baking dish.
