Today’s topic for the August Blogger Challenge is what is your favorite thing to cook!!! I love chili because not only is it healthy but it is also quick and easy to throw together plus the whole family loves it!!!!
Turkey Chili
-
1 lb Ground Turkey Meat (lean or extra lean)
-
14.5 oz can of pinto beans (kidney, black or any other type of bean can be used)
-
14.5 can diced tomatoes with jalapenos (you can use any variety I like the jalapeno one but any kind works)
-
6 oz can tomato paste
-
1 diced bell pepper diced (red, yellow or orange-I used 2 today because they were tiny)
-
1 med onion diced
-
2 garlic cloves minced
-
2 tbsp chili powder
-
1 tsp cumin
Spray nonstick pan with olive oil, heat pan over med-high heat. Add ground turkey and begin browning 2-3 minutes then add onion, peppers, and garlic and continue cooking for about 3 minutes (meat does not need to be completely cooked). Drain excess juice from pan and add mixture to crock pot. Add beans, tomatoes, tomato paste, chili powder and cumin to crock pot and mix well. Cook on high for 4 hours or on low for 8 hours.
Serve with hard and or soft taco shells if desired.
