How quickly the weeks pass!!! I am once again participating in the meal planning challenge hosted by Laura and Jill!!!! This week I was slightly lazy and I didn’t chop everything up I needed for the week, although I do have Monday off thanks to Christopher Columbus so I may actually do all my chopping today!!!
Last week I pretty much followed my meal plan exactly except when the weekend came, I ended up eating at the diner for breakfast on Saturday. Sunday was a mix of veggies, dip and chicken appetizers for football plus a little pumpkin beer…..so much for sober October.
Here is my meal plan for this week:
Monday
- Breakfast: eggs on whole wheat bread
- Lunch: Italian egg drop soup
- Dinner: penne with turkey sausage and squash
- Snacks: fruit, kind bars
- Breakfast: Click expresso shake
- Lunch: Eggplant, roasted tomatoes, cucumber salad & greek yogurt
- Dinner: Chicken with mustard chive sauce
- Snacks: fruit, veggies, kind bars
- Breakfast: Click shake
- Lunch: Italian egg drop soup
- Dinner: Tilapia with roasted tomatoes
- Snacks: nuts, HB Eggs, fruit
- Breakfast: Yogurt with granola
- Lunch: Eggplant, roasted tomatoes, cucumber salad & greek yogurt
- Dinner: Black bean cakes with salad
- Snacks: veggies, fruit
- Breakfast: egg sandwich
- Lunch: Black bean cake with salad
- Dinner: Chili
- Snacks: kind bar, fruit
- Breakfast: eggs with toast
- Lunch: hot and sour soup
- Dinner: out to eat
- Snacks: nuts, veggies
- Breakfast: bagel with LF cream cheese
- Lunch: Roast Beef sandwich
- Dinner: Sauce with pasta
- Snacks: veggies

Yummy week, Toni! I love your soup ideas, and the eggplant dish and bean cakes sound really good, too. I am SO sorry about the NYC marathon… I probably already told you this, but the first time I trained for a marathon, I had to drop out injured. It was so discouraging! I added in a lot more leg strengthening in my recovery which helped a lot. And I did get to run one the following year! But a marathon does take a huge toll on our bodies, in my opinion. Running a few is great, but I don’t think I”ll ever be running one or two every year, (or more!) as some people do.
