This has been a stressful week both personally (I cant discuss at this time) and physically (I will elaborate tomorrow). Unfortunately my exercise regimen is going to be decreased for the next few weeks which means I really have to focus on my diet to maintain my current weight. I have meal planned on and off the past few months but with so much going on in my life I have let that slide which resulted in more eating out. My waistline is not thanking me so to keep myself in check I decided to join the MenuPlanning Challenge hosted by Jill Conyers and Laura from Mommy, Run Fast.
I menu plan on Saturday night utilizing both my recipe books and weekly grocery store circulars, this way I can develop my grocery list and get the best deals on all the items I need shop for on Sunday. I have a handy preprinted grocery list that has a weekly meal planner on the bottom!!!
Here is my plan for this week because I know you cannot understand my chicken scratch above:
Monday:
- Breakfast: Chobani with granola, coffee
- Lunch: Salad with rotisserie chicken
- Dinner: Chicken and orzo skillet with baby spinach, feta and tomatoes
- Snacks: Homemade energy bar, veggies and hummus
Tuesday
- Breakfast: Shakeology with banana
- Lunch: Left over chicken and orzo skillet
- Dinner: Turkey Burgers and salad
- Snacks: Homemade energy bar, veggies and hummus
- Breakfast: Click expresso shake
- Lunch: Left over Turkey burger and salad
- Dinner: Beef and Broccoli
- Snacks: HB eggs, fruit
Thursday
- Breakfast: Click expresso shake
- Lunch: Italian egg drop soup with arugula and chickpeas
- Dinner: Rainbow Macaroni Salad with veggies and tuna
- Snacks: celery plus nut butter, fruit
Friday
- Breakfast: Shakeology shake
- Lunch: Left over Rainbow Mac
- Dinner: Tilapia, broccoli and brown rice
- Snacks: Homemade energy bar, veggies and hummus
- Breakfast: Click expresso shake
- Lunch: Chobani yogurt
- Dinner: Out at a restaurant
- Snacks: HB eggs, fruit
Sunday
- Breakfast: Bagel with LF cream cheese
- Lunch: Roast beef sandwich
- Dinner: Sauce and macaroni
- Snacks: Homemade energy bar, veggies and hummus
I not only meal planned but I also cut up every vegetable I needed to create every dinner this week. This enables me to be able to come home from work and not have to think about the meals I need to cook because every component is jus ready to be cooked!!! The easier the better!!! When I take the time to prep on Sundays I have no excuses not to cook or eat healthy during the week because everything is ready to go!!!!!
As far as what I am going to eat all week I am ready!!! As far as everything else goes, I am not so sure but whether I like it or not the week will progress because life goes on no matter how much you wish it would just stop for awhile. I love the idea of cutting everything up on Sunday so that it is all ready for you for the week!! My motivation for this week is finishing what I started. I am in the last week of pregnancy (yahoo!!!!) and I need to finish this pregnancy how I started it…healthy and on the move! I hope things go better for you this week….physically and personally.
