The Freekeh takes about 25 minutes to cook so I premade it the night before and just reheated it in a pan in the morning! Freekeh plus eggs plus cheddar plus scallions plus salt & pepper equals pure deliciousness and it is a pretty hearty breakfast too!!! Check out the recipe below:
- 1/2 cup freekeh, cooked
- 1 scallion, sliced
- 1/4 cup cheddar, shredded
- 2 eggs
- salt & pepper to taste
- Warm freekeh in pan and season with salt and peeper to taste. Add warmed freekeh to bowl and top with 1/2 of the scallions and 1/2 cheddar cheese. Fry eggs in pan to preferred doneness, season with salt and pepper. Add eggs to the bowl and top with the rest of the scallions and cheddar.
- Break yolks, mix and enjoy!

I also received the Rosemary Sage Freekeh to try out. This flavor was amazing!!! It went perfectly with my baked chicken and white corn. The color was a little plain, but the flavor was delicious. My whole house loved it!!!
Now that I discovered it I will definitely be using Freekeh frequently when I cook! I can’t wait to experiment more with it! Sue from This Mama Runs for Cupcakes had an awesome recipe using Freekeh that I am definitely going to try: Sundried Tomato & Feta Freekeh Burgers. I would definitely check it out if I were you, but not before you enter my giveaway for a free package of Freekeh and a Freekeh cookbook!! You can enter via the form below:
