I absolutely love chia seed pudding. Why???? It is delicious, filling and is good for you. Chia seeds are high in protein, fiber, and omega-3 fatty acids!! They are also great because in water they expand. I find when I eat chia seeds I am fuller for much longer! I have also chia seeds are great for long distance runners because they hold water and consuming them before a long run helps with maintaining hydration….
Chia seeds are pretty awesome!!!! Check out my chia pudding recipe below:
- 2 bananas
- 2 cups almond milk (or any milk you prefer)
- 2/3 cup chia seeds
- 1/4 cup maple syrup
- 1 tbs coconut oil
- Combine Chia seeds, almond milk, and maple syrup in a bowl.
- Cut bananas into 1/2 inch slices. Heat cocnut oil in a large pan and add banana slices. Flip when browned on bottom. Add to bowl when finished. FYI: The bananas brown and then turn to mush, just mix them in the pudding.
- Combine all and refrigerate for 24 hours.
- Creates 4-6 servings.
I used all organic products for this pudding and the majority from NOW Foods-maple syrup, chia seeds, unsweetened shredded coconut and organic virgin coconut oil.
